Chicken With Couscous Timbale
1 Chicken fillet
2 Rashers of back bacon
Coriander and olive oil; liquidised together
Salt and pepper
Roast the vegetables with salt and pepper and coriander oil.
Prepare the couscous. Layer couscous and vegetables in the mould, one on top of the other.
Chicken: flatten chicken fillet with wooden mallet. Put stuffing at one end and roll up.
Put two rashers of back bacon down and wrap chicken roll in bacon. Bake in the oven.
