Chicken and Chutney Pasta Salad
1/2 lb Ziti
3 Green onions
1/2 c Mango chutney
1/2 c Mayonnaise
2 c Shredded cooked chicken
Salt and pepper
Cook the pasta in a large pot of boiling, salted water until tender but still firm, 8-10 min. Drain and rinse well in cold water.
While the pasta is cooking, cut the green onions crosswise into very thin slices. Chop the fruit in the chutney.
In a medium bowl, stir together the chutney with its chopped fruit and the mayonnaise until well blended. Add the cooled pasta, green onions and chicken and toss until well blended.
