California Gingered Fruit Salsa Sundaes
1/2 c Raspberries
2 tb Sugar
3 tb Minced crystallized ginger; or to taste, up to 4
1 sm Firm-ripe mango; diced fine (about 2/3 cup)
6 lg Strawberries; diced fine
1/2 c Finely diced fresh pineapple
1/2 ts Balsamic vinegar
1 pt Super-premium vanilla frozen yogurt
In a bowl, crush raspberries coarsely with sugar and let stand 5 minutes. Stir in ginger, mango, strawberries, pineapple, and vinegar. Scoop frozen yogurt into 4 sundae dishes and spoon salsa over it.
