Cajun Chicken, Bacon and Mango Wrap
2 Tegel boneless chicken breasts; (2 to 3)
1 ts Gregg's Cajun seasoning; (1 to 2)
1 tb First Choice olive oil
1 200 gram pac Kiwi bacon; rind removed and chopped
Juice and zest of 1 lime or 1/2 lemon
4 tb Best Foods mayonnaise
2 ts Desiccated coconut
1/2 c John West Mango slices
1 sm Red and 1 small green capsicum sliced
2 c Shredded lettuce
1 pk Discovery flour tortillas
Coat the chicken with the Cajun seasoning.
Heat the oil in a sauté pan. Add the chicken and stirfry until cooked through.
Remove the chicken from the pan, add the bacon and cook until golden.
Remove and mix together with the lime juice and rind, mayonnaise and coconut.
Spoon the mayonnaise in the centre of each warmed tortilla.
Add the lettuce, peppers and mango and sliced chicken.
Roll up into a cylinder.
Slice diagonally across the centre to expose the filling. Serve with a spicy salsa or guacamole.
