Black Runner Bean, Rice And Mango Salad
2 c Cooked black runner beans
2 c Cooked Wehani rice
1 c Finely diced crunchy celery
1 c Diced mango
1/4 c Finely diced red onion
1/2 c Packed cilantro, chopped
1/3 c Dressing of choice made with olive oil, white wine vinegar and toasted chili powder, up to
Salt and freshly ground black pepper
Mix the ingredients together and season with salt and pepper.
