Black Bean Salad
1 cn (16 ounce) black beans; drained and rinsed
1 bn Cilantro; chopped
1/2 c Sweet onion; (vidalia is wonderful, however out of season red will do)
1 Red bell pepper; chopped
1 c Corn kernels; (frozen are fine)
Juice from 5 juicy limes
Freshly ground black pepper
Mango; peeled and sliced, (garnish)
Mix all ingredients except mango. Chill for at least 2 hours or overnight. Serve on warmed no fat or low fat corn tortillas and a great salsa (we crave Arriba Chipolte Salsa). Garnish with mango.
