Black Bean-mango Salsa
1 c Black beans, cooked
2 Whole mangos, chopped
1/2 Red bell pepper diced
1/2 Green bell pepper, diced
1/2 Red onion, diced
3/4 c Pineapple juice
1/2 c Fresh lime juice
1/2 c Cilantro, chopped
2 tb Ons, ground cumin
1 sm Jalapeno, or chile of choice
Salt and pepper to taste
Throw the whole mess together, let flavors combine for at least and hour. If mangos aren't too ripe, this can last for up to 4 days covered in the fridge.
