Cheery Cherry Pie
1 c Sugar
3 tb Cornstarch
1/4 ts Slat
1 c Cherry juice
1/4 ts Food coloring, red (opt. )
2 cn Cherries, red tart; pitted 1 lb. each
1 Crumb crust, 9"
Whipped cream (opt. )
Mix sugar, cornstarch, and salt in a saucepan. Add juice and coloring;
stir until smooth. Cook until thickened and clear, stirring constantly.
Add cherries; simmer 10 to 15 minutes, stirring gently once or twice. cool.
Pour into 9" crumb crust; chill. Garnish with whipped cream, if desired.
