Fig and Apple Compote
1 Lemon; Juice of
1 c Apple juice
2 lg Tart apples; chopped, peeled and cored
1/2 c Large chopped dried figs
1 lg Stick cinnamon; broken into pieces
1/2 ts Freshly grated nutmeg
1 ts Vanilla
1/4 c Honey
Bring juice of lemon and apple juice to boil in saucepan. Add apples, dried
figs, and honey. Stir in cinnamon and nutmeg and simmer uncovered until
thick. Add vanilla and stir. Serve warm.
