One 8-inch round puff pastry
1 Medium-large Golden Delicious apple; peeled, cored and thinly sliced
2 tb Sugar
2 tb Cold unsalted butter; cut into bits
1/2 c Apricot preserves; strained
1 tb Calvados
Preheat the oven to 425 degrees F. Arrange the pastry an a baking sheet, top with the apples forming concentric circles and sprinkle with sugar. Dot with the butter and bake for 30 minutes, or until pastry is golden.
Meanwhile, in a small saucepan combine the apricot preserves with the Calvados, bring to a boil and simmer for 2 to 3 minutes, or until smooth and thick. Brush the apples with the glaze and transfer to a serving dish.
Yield: 1 to 2 servings
