Apple Granola Bars
1 1/2 c Walnuts
1/2 c Dry Apples
1 t Cinnamon
1 t Vanilla
1/4 t Salt
1/2 c Firmly packed Light Brown sugar
1/2 c Dried Apricots
6 c Oatmeal, quick cooking
3/4 c Unsalted Butter
1/2 c Honey
Place nuts and dried fruit in a food processor and chop finely. Place in a large bowl and add the oatmeal. In a sauce pan, combine honey, sugar, butter and cinnamon, bring to a boil for 1 minute. Stir into the oatmeal mixture with the vanilla and salt. Press evenly and firmly in a 10x15 jelly roll pan. Bake 15 minutes in a preheated 350oF oven until golden. DO NOT OVERBAKE Cool and cut into bars. Store in an airtight container or refrigerate.
