Plantains Stuffed With Shrimp
1 lb Shrimp; peel, minced
1 Onion, mince
1 Green pepper, mince
1/2 c Tomato sauce
1/2 c Olive oil
1/2 ts Garlic powder
1/4 ts Dried oregano
1/4 ts Cumin
2 Green plantains; halve, decoratively carved Or 4 Puff-pastry shells; thaw, bake
In a saucepan combine shrimp, onion, pepper, tomato sauce, oil and seasonings. Bring to a simmer and cook for 15 minutes. Spoon shrimp mixture into plantains or puff-pastry shells.
