Cranberry Fruit Conserves

3 Tangerines or navel oranges
1 c Sugar
1 pk (12 oz) (3 C) fresh cranberries
1 pk (6 oz) dried apricots chopped (1 1/3 C)

Peel and section one tangerine, reserving fruit and 2 large pieces of zest. Set aside.

Squeeze juice from remaining 2 tangerines. Add enough water to juice to measure 1 cup.

In large saucepan, mix tangerine juice mixture, and sugar. Boil over medium high heat stirring to dimlve sugar.

Add cranberries, apricots, tangerine sections, and zest. Boil gently, stirring often, for 5 to 8 minutes until cranberries burst and mixture thickens.

Remove zest. Either cut zest into thin slivers and add to cranberry mixture or discard.

Pour the hot cranberry mixture into sterilized jars. Cool on rack. Cover and refrigerate.
