Baked Pears with Coconut Spice Filling

2 pears -- peeled, halved, and cored
1/2 cup shredded coconut
2 tablespoons brown sugar - (packed)
1/2 teaspoon ground cinnamon

Place pears cut-side up in baking dish. Combine coconut, brown sugar and cinnamon. Place 2 tablespoons filling in each pear half. Bake at 350 degrees until tender and bubbly, about 30 minutes.

This recipe yields 4 servings.
