Baked Brandied Pears
1 large pear -- peeled, halved, and cored
2 tablespoons chopped mixed dried fruit
1/2 teaspoon ground cinnamon
2 teaspoons brandy
1/4 cup unsweetened apple juice
2 tablespoons plain non-fat yogurt
Preheat the oven to 350 degrees. Spray a small baking dish with nonstick cooking spray.
Place the pear halves cut-side up in the baking dish. Sprinkle each half with dried fruit, cinnamon and brandy. Pour the apple juice into the bottom of the baking dish.
Bake for 20 minutes. Remove from the oven and let the pears cool for 5 minutes. When ready to serve, garnish with yogurt.
This recipe yields 2 servings. Serving size: 1/2 pear.
