Persimmon Freezer Jam

4 c Persimmon puree
3 c Sugar
2 tb Lemon juice
1/4 ts Lemon peel

Mix all ingredients together & boil at low temperature for approximently 20 minutes or until thickened. Pour into sterilized jars & seal. Store in refridgerator or freezer.
