4 Kiwifruit, peeled and cubed
2 c Unsweetened apple juice
1 tb Lemon juice
1/2 ts Grated orange rind
Kiwifruit slices (optional)
Combine kiwifruit, apple juice, and lemon juice in container of an electric blender; process until smooth. Stir in orange rind. Pour mixture into an 8-inch square pan; freeze until almost firm.Spoon frozen mixture into a mixing bowl; beat with an electric mixer until fluffy. Return mixture to pan, and freeze until firm. Let frozen mixture stand at room temperature 10 minutes before serving. Garnish with kiwifruit, if desired. Yield: about 4 cups.
