50 g Butter
1 Pineapple; flesh removed and diced, the outside left intact in a boat shape
A lime; peeled and segmented
50 g Caster sugar
25 g Fresh white breadcrumbs
Preheat the oven 220c/425f.
Melt the butter in a griddle pan. Add the diced pineapple and limes. Cook
for 4-5 minutes, then tip back into the pineapple shell, ensuring all the
butter is tipped in as well.
Top with the breadcrumbs and bake in the oven for 10-12 minutes. Serve
