Roasted Plantains and Carrots
3 lg Plantains; peeled and cut into chunks
2 lg Carrots; cut into chunks
1 md Onion; sliced
4 ts Olive oil; optional
Salt and pepper
Preheat oven to 450 degrees F.
In a large bowl, combine all the ingredients. Transfer them to a greased
baking sheet or pan, cover loosely with foil, and bake the vegetables for
20 minutes longer, or until the plantains are tender.
