Plum Chili Salsa
1 lb Ripe purple or red plums; diced (about 3 cups)
1/3 c Minced red onion
1/2 c Finely chopped coriander
2 Cloves garlic; mashed into a paste with 1 teaspoon salt
1/4 c Finely chopped fresh mint leaves
1 ts Minced seeded fresh jalapeno pepper
1 tb Fresh lime juice
2 ts Sugar; or to taste
Salt and pepper to taste
