Date and Rice Lunch Box Salad
3 c Cooked white and wild rice Mix
1 md Tart green apple; cored and chopped
1 c Cooked ham; diced
1 c Sliced celery
2/3 c Chopped dates
1/2 c Red onion; finely chopped
1/2 c Olive oil; extra light
1/4 c Fresh orange juice
1/4 c Red wine vinegar
Salt and pepper; to taste
Dice 4 ounces of cooked ham to make about 1 cup.
Dressing: Whisk together all the ingredients untill well combined.
Salad: Combine all ingredients for the salad and toss to mix. Add the
dressing and toss to coat. Chill 2 to 3 hrs. before serving.
