Avocado Bean and Bacon Salad
1 Red onion; cut into slices
3 tb Olive oil
3 tb Balsamic vinegar
300 g Extra fine green beans; (10oz)
Salt and freshly ground black pepper
25 g Cooked bacon slices; (1oz)
25 g Parmesan cheese; shaved (1oz)
Preheat the oven to 150 C, 300 F, Gas Mark 2.
Put the onion on a baking tray, drizzle over the oil and balsamic
vinegar and cook for 40 minutes.
Meanwhile cook the beans according to pack instructions.
Cut the avocado into chunks, mix with the cooked beans and onions and
Pile the salad onto the plates, lay the bacon slices on the top and
sprinkle over the shaved parmesan.
