1 c Finely chopped nuts
1/3 c Sugar
1/4 c Cornstarch
1/4 ts Salt
2 2/3 c Milk
1 ts Vanilla
2 tb Butter
Prepare or purchase a 9" pie shell.
Peel 6-8 medium sized kiwifruit. slice in roundlets approx. 1/4"
thich In medium sized saucepan, mix sugar, cornstarch and salt.
Gradually stir in milk until smooth. Over medium heat, stir until
mixture comes to a boil. Boil only one minute. Remove from the heat.
Stir in butter, vanilla, chopped nuts. Fill pie-shell and let cool.
Starting from the outer edge of the pie-shell, add kiwifruit
roundlets in a continous circle until surface is completely covered.
Refridgerate until ready to serve.
