Broiled Figs with Oranges and Sherry Cream

1 c Chilled whipping cream
3 tb Golden brown sugar
3 tb Cream Sherry
6 Oranges; peeled, white pith removed, sliced into rounds
Chopped fresh mint
12 Fresh figs; halved lengthwise
Golden brown sugar
Cream Sherry

Whip cream with 3 tablespoons brown sugar to soft peaks. Add 3 tablespoons Sherry and beat to firm peaks. Cover and chill. (Can be prepared 6 hours ahead.)

Preheat broiler. Arrange oranges in ring around center of each plate. Top with mint. Arrange figs cut side up in broilerproof pan. Sprinkle with brown sugar and Sherry. Broil until sugar begins to caramelize. Mound cream in center of each plate. Top with figs and serve.

Serves 6.
