Date and Cinnamon Cake
6 oz Self raising flour
1 ts Baking powder
1 tb Ground cinnamon
6 oz Margarine
6 oz Light golden soft sugar
3 lg Eggs; beaten
1 tb Treacle
4 oz Dried chopped dates
Pre heat the oven to 180C. Lightly oil a 2lb loaf tin. Sift the flour,
baking powder and cinnamon into a bowl.
Put the margarine and sugar in a food processor, whizz until light and
fluffy. Add the eggs and treacle, whizz again for a few seconds.
Add the sifted dry ingredients and whizz again. Add the dates and
pulse for a few seconds until just combined.
Spoon into tin. Smooth the surface and cook for 45 minutes - 1 hour or
until a skewer when inserted comes out clean.
