Grapefruit Poultry Rub
1 c Grapefruit juice freshly squeezed
2 T Peanut oil
1 T White pepper
1/4 t Dill weed, ground
1 t Salt
1 T Tarragon vinegar
1 Garlic clove minced
2 T Onion minced
1 oz Chablis wine
1 t * Tabasco sauce
*Optional ingredient Heat the peanut oil & wine on Med. until warm.
Stir in the grapefruit juice. Cook for 4-6 minutes on Med. then stir
in the remaining ingredients. Allow to cool for 1/2 hour. Take an ice
pick or steel skewer and pierce the bird all over. Rub this mixture
into the bird. Turn the bird over and pour the remaining mixture into
the body cavity if you are using a whole bird or over the pieces if
you are using the bird cut into serving pieces.
