Cantaloupe Pecan Bread

1 c Sugar
1/2 c Vegetable oil
2 Eggs
1 1/2 t Vanilla
1 1/2 c Flour
1/2 t Baking soda
2 t Baking powder
1/2 t Salt or to taste
1 t Cinnamon
1 Cantaloupe
Peel; seed; puree


Beat sugar and oil until smooth. Add eggs one at time, mixing well after each addition. Mix dry ingredients and add to egg mixture. Mix in cantaloupe puree and pecans. Pour into 3 greased 3x5-inch miniature loaf pans. Bake at 350 degrees for 35 minutes. Cool in pans for 10 minutes and cool completely on wire racks. Serve with softened cream cheese, topped with bananas, strawberries or kiwi fruit.
