6 lb Ham; uncooked
1 cn Plums; (1 lb.)
2/3 c Sugar, brown; firmly packed
1/4 c Water
1 tb Mustard, dry; PLUS
1 ts Mustard, dry
Place ham, fat side up, in a 13x9x2" baking pan. Drain plums,
reserving juice; set plums aside. Combine plum juice, brown sugar,
water, and dry mustard; mix well. Pour half of glaze mixture over
ham. Wrap foil loosely around ham. Bake at 325 degrees for 3 to
3-1/2 hours (about 30 minutes per pound).
Remove ham from oven about 30 minutes before cooking time is up.
Score ham in a diamond pattern, making cuts 1/4" deep in ham fat.
Spoon remaining glaze mixture over ham, and return ham to oven. Bake,
uncovered, at 400 degrees for 30 minutes, basting frequently. Garnish
