Watermelon Rind Pickle
10 lb Peeled watermelon rind *
1 g Powdered lime **
10 lb Sugar
2 1/2 qt Vinegar
1/3 Pk Mixed pickling spices
1/2 Pk Whole cloves
* About 1 large melon. Use a melon with rind at least
1 inch thick. ** From drug store - NOT gardening center!!
Peel rind and cut into 1 1/4-inch squares. Soak overnight in 1 gallon water with
lime powder. Drain and rinse well. Boil in slightly salted water for 20
minutes. Drain. Boil together sugar, vinegar and spices until sugar is
dissolved. (Tie spices in a muslin bag if you want to remove them before
canning.) Add rind and cook slowly for a little over 1 hour. Put in
sterilized jars and seal. If there is not enough syrup, make a mixture of
equal parts sugar and vinegar cooked together until sugar is dissolved.
Distribute equally among the jars. Makes about 5 pints.
