Candied Fruit Peels
Save peels from citrus fruits in as large pieces as possible. Boil
15-45 minutes, depending on thickness of peel; let cool. Use the edge
of a spoon to scrape off ALL of the white part, leaving only the
colored zest. Discard water or save for potpourri.
Bring water and sugar to a boil. Keep adding sugar until you have a
thick syrup. Add prepared fruit peels and simmer 30 minutes. Remove
from syrup and dip both sides in sugar. Dry overnight on waxed paper.
