Coconut Date Nut Quick Bread 2 c Flour
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
2 Eggs
3/4 c Apple juice concentrate
1/4 c Butter
1/4 c Milk
2 ts Vanilla
1 c Dates, chopped
1/2 c Pecans, chopped
1/3 c Coconut, grated
Preheat oven to 350. Combine dry ingredients in medium bowl; set
aside. Beat eggs in separate bowl; blend in apple juice concentrate,
butter, milk, and vanilla. Add to dry ingredients; mix just until
moistened. Stir in dates, nuts, and coconut. Spread into greased
9"x5" loaf pan. Bake 45 minutes, until wooden pick inserted in center
comes out clean.
Cool 10 minutes in pan on wire rack. Remove from pan; cool
completely. Slice and spread with cream cheese.
