Cream Cheese Plum Clafouti
3/4 lb Plums; firm but ripe
1/3 c Sugar
3 oz Cream Cheese; at room temperature
1/3 c Flour
2 ts Vanilla
1/4 ts Salt
2 tb Butter; melted
Preheat the oven to 375 degrees F. Butter a 9" pie plate. Peel, halve and pit
the plums, then cut each half into 4 pieces; you will have 1 1/2
cups, more or less. Beat together the eggs and sugar until pale
yellow. Add the cream cheese and beat until smooth. Add the flour,
vanilla and salt and beat again until smooth.
Combine the plums and the batter then spread evenly in the prepared
pie plate. Drizzle with melted butter. Bake for 30 minutes, or until
puffed and lightly browned. Good hot or warm (it will gradually sink
as it cools.) Sprinkle with powdered sugar before serving.
