Kiwi Fruit Salad
3 kiwi fruits
1 Can fruit cocktail
1 Can pineapple chunks (preferably in syrup, not juice)
Optional: chopped nutmeats
Optional: Curls of dried coconut
3 oz Pkg regular vanilla pudding mix (IMPORTANT: must be the kind you cook, NOT the instant!)
Peel and cut up the kiwi fruits, saving one to garnish the finished
salad if desired. Drain the pineapple, saving the liquid, and add to
the fruit bowl. Drain and add the fruit cocktail. Peel and slice the
banana and stir in along with other desired additions. Measure out 1
cup of the reserved pineapple liquid (if there is less than a cup,
don't bother making up the volume) and mix with the pudding mix in a
small saucepan, stir over low heat until thickened, smooth and
bubbly. Pour sauce over fruits, stir and refrigerate.
