Baked Hawaiian Pineapple
2 (20 oz.) cans pineapple chunks
2 1/2 tbsp. flour
3/4 c. miniature marshmallows
1/2 c. sugar
1 lg. egg, beaten
1 c. Cheddar cheese, grated
Drain pineapple; reserve syrup. Combine sugar, flour and syrup; blend in beaten egg. Stir this mixture over moderate heat until thick. Arrange pineapple chunks in shallow baking dish. Sprinkle marshmallows on top, then grated cheese; finally spoon sauce over all. Bake, covered at 350 degrees for 35 minutes or until bubbly. (You may want to uncover a couple seconds under broiler to brown slightly.) Serve hot as side dish to ham or cold with sandwiches. Serves 8.
