12 firm bananas
1 1/3 c. flour
3/4 c. beer
1/2 tsp. salt
Oil for frying
2 egg yolks
2 egg whites
Peel bananas and cut lengthwise. Sprinkle with some Kirsch and set aside. Separate eggs. Beat yolks until lemony yellow. Set egg whites aside. Mix beaten yolks with flour, beer and salt until smooth. Let the batter rest for 2 hours in a covered bowl in the refrigerator. Before using the batter remove bananas from marinate and dry well. Beat egg whites until stiff. Heat oil to about 370 degrees. Dip banana slices in batter, making sure they are well covered and fry until golden brown. Serve warm sprinkled with confectioners' sugar.
