Brunch Fruit Cup

3 oz. pkg. lemon gelatin
2 c. boiling water
6 oz. can frozen orange juice concentrate, thawed
20 oz. can pineapple chunks in heavy syrup, undrained
11 oz. can mandarin oranges, undrained
1 banana, sliced (or more if you prefer)

In large bowl, dissolve gelatin in boiling water. Stir in orange juice. Stir in remaining ingredients, except banana. Cover and refrigerate for several hours or overnight. Just before serving add banana. 10 (1/2 cup) servings. TIPS: *Green or red seedless grapes, pears or other fresh fruits in season can be substituted or added in addition to the bananas.
