Candied Fruit Peels
1 tbsp. salt
2 c. sugar
2 c. peels (like oranges, etc.)
4 c. water
Add salt and peels to 4 cups water. Let stand overnight. Drain. Wash. Cover with cold water. Heat to boiling. Drain 3 times. Cut into strips. Combine peels, sugar, and 1/2 cup water. Heat and stir until sugar dissolves. Cook slowly until peels are translucent. Drain; roll peels in sugar. Dry on rack.
