Chicory and Fruit Salad
1 head chicory, thinly sliced
1 celery hearts, thinly sliced
2 oranges, peeled and segmented
4 oz. grapes, white, seedless
2 red apples, cored, sliced
1/4 c. lemon juice
2 oz. mushrooms, sliced
2 oz. English walnuts, coarsely chopped
1 bunch watercress
4 tbsp. salad oil
2 tbsp. orange juice
1 tbsp. lemon juice
1 tsp. sugar
2 spring onions, thinly sliced
Salt and pepper to taste
Dip apple slices in lemon juice to keep from turning brown. In a large salad bowl toss together chicory, celery, orange segments, grapes, apple slices, mushrooms, walnuts, and watercress. For dressing, mix together salad oil, orange juice, 1 tablespoon lemon juice, sugar, spring onions, and season to your liking with salt and pepper. Add dressing to salad just prior to serving. Serves: 4.
