Cottage Cheese and Fruit Mold
1 (6 oz.) pkg. lemon gelatin
1 c. boiling water
1 (6 oz.) can frozen orange juice concentrate
1 tsp. salt
1 lb. cream-style cottage cheese
2 c. sour cream
Dissolve the gelatin in boiling water. Add the orange juice concentrate and the salt and stir until blended. Chill until slightly thickened. Whip the cottage cheese until smooth and combine with sour cream. Fold into gelatin mixture and place in a 6 cup ring mold. Chill until firm. Unmold on a large cake plate and arrange desired fresh fruits and sprigs of salad greens around the outside border. Serve with desired salad dressing. 12 servings.
