Crystallized Grapefruit Peel
Cut peel into strips and boil until tender, changing the water 3 or 4 times. Make a syrup of equal parts of sugar and water. Boil until it spins a thread; add to this an amount of peel equal to the amount of sugar used. Boil until peel is transparent. If syrup becomes too thick before peel is transparent, add 1 or 2 tablespoons hot water and continue cooking. When peel is transparent, lift out and drain well, then roll in granulated sugar. Let dry; then pack away. (Orange peel may be used.)
