Curried Nectarine Salsa
1 teaspoon curry powder
2 cups nectarine -- diced
1/2 cup red bell pepper -- diced
1/4 cup red onion -- diced
1/4 teaspoon salt
Place curry in a large skillet; cook over low heat 30 seconds or until fragrant, stirring occasionally. Remove skillet from heat; add nectarine and remaining ingredients, stirring until well blended. Serve warm or at room temperature. Serves five.
