Date and Nut Gems
1 c. chopped dates
1 c. ground walnuts
1/2 c. raisins
1/2 c. sugar
3 slightly beaten eggs (or substitute)
Mix all ingredients. Line miniature cupcake tins with mini-fluted cups. Spoon batter into 32 cups. 55 calories (with sugar) or 50 (with substitute).
