Fresh Cantaloupe Salad
3 fresh cantaloupe
2 c. cottage cheese
1 c. fresh raspberries
1 c. fresh pineapple wedges
Chill cantaloupe. Cut in half lengthwise; scoop out seeds, drain. Fill cavities with cottage cheese; surround cottage cheese with raspberries and pineapple wedges. Garnish with mint. Serve with salad dressing (opt.). Yields: 6 servings.
