Frozen Papaya Dessert

3 Ripe papayas
2 Envelopes unflavored gelatin
1/2 - 2/3 cup white wine
4 Eggs, separated
1/2 c Powdered sugar
4 T Lemon juice
Mint leaves, for garnish

In a bowl, dissolve gelatin in white wine. Peel papayas. cut into small pieces. Process in a blender or food processor until pureed and smooth. Beat egg whites until soft peaks form. Beat egg yolks with powdered sugar until creamy. Add papaya puree to egg yolk mixture. Melt gelatin and wine over low heat. Add to egg yolk mixture. Add lemon juice. Carefully fold in beaten egg whites. Transfer mixture to a large bowl. Cover with foil. Freeze for about 2 hours, stirring once or twice. When serving, spoon mixture into individual dishes. Garnish with mint leaves. Serves 4.
