Persimmon Pudding (Diabetic)
1 c. persimon pulp plus 2 tbsp.
2 tbsp. & 1 tsp. sweet ten
1 c. flour
1/2 tsp. cinnamon
1 1/2 c. milk
2 tbsp. margarine
1/4 tsp. baking soda
Combine pulp, egg and sweetener, then add dry ingredients and 1/2 of milk. Add remaining milk and melted margarine. Pour into greased baking dish. Bake at 350 degrees for 1 hour.
