Persimmon Pudding

2 cups persimmon pulp
1 1/2 cups sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 egg -- beaten
1 cup 1% low-fat milk -- or skim milk
1 teaspoon cinnamon
1/2 teaspoon vanilla

Mix dry ingredients, then stir in pulp, milk and beaten egg. Pour into sprayed 9x13 pan. Bake at 350 for 30-35 minutes.
