Tangy Grapefruit Vinaigrette
1/2 cup fresh grapefruit juice
1/2 cup rice wine vinegar
1/4 cup cold water
1 clove garlic -- finely minced
1 teaspoon finely chopped fresh basil
1/2 tablespoon finely chopped fresh thyme
1/2 teaspoon black pepper
1/2 teaspoon finely chopped parsley
Citrus juices make a tasty base for salad dressing.
Makes 1 cup
Whisk together the grapefruit juice, vinegar, and water in a small nonreactive bowl. Add the garlic, basil, thyme, pepper, and parsley.Mix well and chill until ready to use. It will keep nicely in the refrigerator for several days.
