Pear Pie

1/3 c sugar
1/4 c flour
1/4 t nutmeg
1 pn salt
6 c pears -- sliced
1 tb lemon juice
pastry for 2-crust 9" pie

FILLING: combine sugar, flour, nutmeg and salt. Toss with the pears and sprinkle with the lemon juice. Roll out half of the pastry and fit into a 9" pie pan. spoon in the filling and top with the remaining crust. Seal and flute the crust. Cut vents in the top crust. Bake in a preheated 400 F oven 35 to 40 minutes or until the pears are tender. If necessary, cover the edges of the pie with foil to prevent excess browning. cool before cutting.
