Kiwi Pear Chutney
1 1/2 c Brown sugar, packed
1 1/2 c Cider vinegar
1 c Chopped onion
1 Lime, thinly sliced
4 lg Cloves garlic, chopped
1 1/2 ts Cinnamon
1/2 ts Cloves
1/2 ts Allspice
1/4 ts Crushed red chile pepper
2 tb Minced preserved ginger
1 c Raisins
1/2 c Chopped walnuts
4 c Kiwifruit, peeled and chopped
4 c Pears, peeled and chopped
Mix first 12 ingredients in a large heavy saucepan. Bring to a boil
and simmer, uncovered, stirring frequently, for 30 minutes. Ladle
into hot, sterilized half-pint jars and seal. Process in a boiling
water bath for 15 mins. Cools and store in refrigerator after
opening. Makes about 6 jars.
