Mixed Fruit Cobbler

3 md Ripe pears peel, core, slice
2 lg Nectarines peel, core, slice
2 lg Peaches; peel; pit; slice
1/3 c Sugar
2 T Cornstarch
1 T Butter; chilled; small pcs


Topping:
1 c Flour
1/2 c Yellow cornmeal
1/3 c Sugar
2 t Baking powder
1/4 t Cinnamon
1/8 t Salt
1/2 c Milk
1/4 c Oil


Use your own combination of fruit dipped in a water/lemon juice mixture to prevent darkening.


Preheat oven to 375 degrees Spray an 8-inch pan with cooking spray. Mix fruit, sugar and cornstarch and place in prepared pan. Dot with butter.


Topping: Mix ingredients and spread over filling. Bake until topping is lightly golden and fruit juices are bubbling, about 35 to 40 minutes. Serve with cream or ice cream.
